Are you looking for a new recipe to add to your list of summer salads?  Well look no further because I just found one that I think you’re going to love!

When I came across this recipe by Rebekah Peppler, I knew I had to give it a try.  Maybe it was the amazing carrots I had just picked up at the farmers market or the fact that the recipe was so easy to make, but let me tell you, I had no idea that I would be this excited about a raw carrot salad!!  🙂

Carottes Rapees, also known as “french carrot salad” is a beautifully simple dish that combines grated carrots marinated with olive oil, lemon juice, cumin and parsley.   The recipe also calls for honey, but personally, I prefer savory versus sweet so I made mine without the honey.

What I love about this recipe is that it’s light, refreshing and so easy to make.  You might be wondering about the cumin powder but I think that’s what makes this dish so great.  Honestly, after trying this recipe, I’m going to be adding cumin powder to all of my salads.  It’s that good!

The salad is wonderful on its own, but you can also combine it with lettuce greens for a heartier salad, layer it on top of avocado toast, toss it with some quinoa or chickpeas for a filling lunch bowl or serve it as a side dish with some grilled chicken or fish.

Summertime cooking is all about keeping things simple and sometimes the simplest recipes turn out to be the most amazing dishes.
