Let’s face it, we’ve all got some extra time on our hands.  If you’re like me, one of the first things I want to do when I’m feeling bored is reach for something to eat.  And more often than not, that “something” is usually chocolate!

Now I know it would be so easy to grab a chocolate bar or some other type of store bought candy, but why not take advantage of this time at home and make your own sweet treat?

If baking is not your thing, no worries!  My recipe for Brownie Bites is really easy to make.  There’s only 4 ingredients and no baking required!  Everything goes into a food processor and before you know it, you are in brownie bite heaven!!

Another reason I love this recipe is you can customize it to whatever you have in your pantry.  For example, if you don’t have walnuts, you can use almonds, pecans or brazil nuts.  If you don’t have almond butter, try pecan butter, sunflower seed butter, or Nuttzo.  Dried figs would make a great substitute for the dates and you can use carob or cocoa powder if you don’t have cacao.

NO BAKE BROWNIE BITES

1 cup walnut pieces
1 1/2 cups pitted dates
1/2 cup almond butter, softened
1/2 cup cacao or carob powder

1. Combine walnuts and dates in a food processor until crumbly.
2. Add cacao powder and almond butter.  Process until well blended.
3. Scoop about a teaspoon into your hand and roll into a ball.
4. Pop one in your mouth and store the rest in the fridge!

Optional toppings:  shredded coconut, hemp seeds, cocoa powder.
